Have a garden shed with no windows, but it has an attic ventilator. Is it ok to cook using a gas stove?
Since it snows outside, I can't even keep the door open. The shed is 12x10 in size. Is there any chance of carbon monoxide poisoning since there isn't much airflow?

There is always a chance , so er on the side of caution.
If the building is sealed tight as a drum, then you will not receive any outside air when a fire is burning. This is a major problem for the appliance and the remedy is to install a vent to draw burnable air from . You could do so in the floor, the wall, or the roof; but you need air to burn so as not to cause a build up of burned out Oxygen / Carbon Monoxide and that long nap you fear.
The window in the attic won't be of much use , if air is not passing back and forth when she's closed in the winter. Your stove manufacturer will have instructions as to just how much air that stove requires also, check with them or a gas appliance repair man to find how much ventilation.
